No. I'm not having one, thank you very much!
But some of you often have a hard time identifying certain foods. The one that is particularly on my mind today is the yam. Oh-that good-'ole orangey pillow of hot potato-ish love! Often confused with it's cousin twelve-teen times removed, the sweet potato, they ARE NOT THE SAME!
Yams are similar in size and shape to sweet potatoes (I know, that doesn't help at all!), but are starchier and drier. They aren’t as widely grown in the United States, but can be found in most International grocery stores. Yams have white to dark brown skin and off-white, yellow, purple or pink flesh, depending on the variety. Yams are high in vitamin C, fiber and potassium, but have less vitamin A than sweet potatoes.
As you can see here, sweet potatoes are pictured on the left. The orangey-flesh colored deliciousness shown on the right is the yam.
So, next week as you're serving candied yams, sweet potatoes, or whichever other form of sugary goodness you put on your family's menu, please be sure to know what you're actually serving. Not that anyone will care! ...not that anyone will know the truth (and if they do that they'll correct you), but just know that there is a difference.

It’s chilly outside. So Get Your CHILI on…
Some things are meant for Fall.
Well, there’s football (for those of you who like that sort of thing – insert eyeroll), long walks and drives to
enjoy Fall’s colors, and of course the Fall food! My Fall Faves are warm apple cider, pumpkin
bars with cream cheese frosting, and (because you didn’t see this one coming)
chili. There is nothing worse than bad
chili though! …too much tomato product
so it’s too tomatoey, not enough chili powder, too thick and dry… While traditional red bean chili can be
“change-your-life-good” if it’s done right, there are a few things you can do
to take it over top and amaze yourself, your family, and friends. And here they are:
1)
White
Bean Chicken Chili. Substitute
chicken for beef products and use white kidney or cannelloni beans instead of
red kidney beans. The spices are
different too. Whereas chili powder
makes the flavor in traditional chili, cumin is the star of this show. You’ll also sub white pepper for black and
use greenish things like diced green chili peppers and/or jalapeños for
heat. Also oregano adds great flavor (I
use dried Italian Seasoning to give it added pizzazz). Since most WBCC recipes are generally broth
based, don’t be alarmed if the consistency isn’t as thick as a red chili!

Beans,
Beans, Make You…. There’s no gray area with beans; either
you love them or you don’t. If you love
them, you might enjoy making traditional chili using a different bean variety
OR mixing varieties. While red kidney
beans are utterly fantastic for their size, flavor, and heartiness, try
substituting or adding/mixing northern, pinto, black, and/or navy beans to your
next pot of love!
3)
Ground
Beef vs. (insert your sideline meat here)! My favorite: Stew Meat! Thick chunks of chuck roast (say that 10
times fast!) browned in flour and oil then simmered in with the chili for hours
= HELLOOOOO!!! HEAVEN! If using beef,
also try using rib, plate, or brisket meat.
If you’re feeling especially experimental, try using venison or other
game meats capable of being cooked until tender.

Go Alongs! Growing
up in the Midwest, I’ve encountered many a strange accompaniment. Q: The
strangest? A: Salad! …it’s just not patriotic; those don’t go
together! Generally a bread of some sort
goes well with chili. Of course some
type of cornbread or maybe a biscuit or 3.
I’d recommend trying focaccia or some flavored variation. You could also do your typical saltine or
oyster crackers, but have you ever doctored up your crackers? My Aunt Helen makes these saltines where she
takes a huge baggie then adds a sleeve of saltines, canola oil, a dry ranch
packet, and crushed red pepper. Those
would be great with chili. Your favorite
search engine will give you some good variations of flavored saltine ideas. Lastly, there’s a new favorite of mine. Tostitos Scoops! The perfect size to shovel up a good hearty
bite of chili perfection!

Last but
not least, the “last but not leasts”… Don’t ignore the last ingredient to your
chili! What do you put on top of your
chili at the very end just before serving?

that was the point! The stuff you
already do: shredded cheddar, sour cream, chopped onions. Next time, do things differently. My #1 draft pick: diced Monterey Jack! Dice a block of MJ into ¼” cubes. When you put them on top then mix in, you’ll
find these smooth, spicy, and creamy, nuggets of deliciousness throughout your
bowl. Other recommendations would be
fresh roasted garlic and chili peppers (chopped). Don’t forget the hot sauce! My favorite 2nd string: Jalapeño
Hot Sauce. It’s green and ugly but not
nearly as hot as habanero hot sauce and takes on a completely different flavor
profile than your average red hot sauce.
Next time you visit a specialty grocery store, give a new hot sauce variety
a whirl!

Got Shrimp?
Shrimp is the most delicious-est, most versatile, most budget-friendly ocean critter EVER! My favorite preparations are Spicy Chipoltle Grilled Shrimp and Shrimp Scampi with Penne. Fresh or even previously frozen, always having a couple pounds on hand keeps me happy! Anywho, here's an article that I found interesting enough to share...

Scapes? Who knew!
Did you know that the green part of fresh garlic (scapes) can be eaten? I just had this wild hair in my back yard; wondered what they tasted like, pinched off a piece, and here we are!

Lemon Pepper: Chef Tested
So, all my life, I've HATED lemon pepper! hate, Hate, HATE IT!
Everyone around me is so excited to share that they've made lemon pepper this or lemon pepper that. Eww! (insert one of my disgusted facial expressions here)
Well, the other day, my classmate, "J-Bird", and I ventured out to the land of Trader Joes. Almost lost my mind - I loved that place so much! The produce, cereals, oh, and the spices! OOOOH, the spices! Saw a lemon pepper grinder - you sold me at the concept! I flipped the container around to read the ingredient label. Fancy that, ingredients I can identify AND pronounce (unlike those one spice guys.....)!
Used it tonight on baked chicken. Did I mention how much I LOVE lemon pepper? The winner? Clearly TJ came out on top!
On another note, I'm off to test a Cabernet and Chardonnay for a class assignment. Seriously! Joys of being a culinary student! Good thing I found the two, I mean,

Q: "Parlez-vous Francais?"
A: "NO!" I have, however, been fortunate to have worked amongst several great French chefs in the last couple weeks. Pictured above (photo taken 1/14/13) are French Translator: James, Yours Truly, and French Chefs Yannick Jagernaud, and Frederic. These guys have helped me and my classmates make some of the most beautiful food I've ever laid my lips on! Tomorrow I have my French Gourmet Dinner, which I'm extremely excited about! I volunteered to help with the Amuse Bouche (pre-appetizer) which has proven to be just as challenging as I'd hoped it'd be! Look for pictures of the final products, here are several taken during the demos that Frederic and Yannick prepared for us. I'll update with names in the next few days.

Begin Sequence: Countdown til Graduation! Starting in 10, 9.....
Hi. So for whatever reason, I decided (just as randomly as I'd initially made the decision) to participation in the graduation ceremony in May. So, now I'm counting down to May 1! I GOL (giggled out loud) as I submitted my application; they asked height, how you want your name to appear, so on, so forth....the application asked for the cap size. [play track: empty space, crickets chirping] Umm, do what? I haven't worn a hat since..... [play track: empty space, crickets chirping] ..... so I have no idea (!) what size cap I'm going to need! I guesstimated (yeah, I SAID IT!). I'm aware that I have a big head as it is (stop laughing!) and with the size of my hair making it even more mammoth, I picked one of the biggest sizes. Fear not though, I have several months to figure this out! I'm excited though because now I get to figure out who to invite, invitations, and all of that rigamarole! I'll be graduating with honors, assuming I don't completely flub through this final semester!
In other news, today was the first day of the semester. I greatly enjoyed the 3 week break! Going back was exciting. Met some new instructors, went over everything anyone thought needed to be gone over (which this nerd thoroughly enjoys!), but urruhhumm, some of my classmates drive me NUTS! Pray for me. Again, countdown til May 1!

In Today's News....
HEADLINE: WENT TO THE GYM (like I ALWAYS do!)
So I've been working at least 5 days a week since.......at least summer time (seriously, I have!). My membership to the YMCA is the best investment I've made in a very long time! I love the group fitness/cardio classes. Their equipment is great. My struggle: I want to lift weights but there are always a bunch of macho muscle-bound masculine men around! I haven't used weight machines in YEARS and don't exactly know how they work. I don't want to be the dainty female who can't figure out how to use the leg press. CORRECTION: I AM the dainty female who can't figure out how to use the leg press! Am I bogus for wanting to use the downtown Y because I think there's a room that only women can use?
FINALLY TRIED "INSANITY" WORKOUTS
A friend of mine sent me the "Insanity" (r) series last summer. I've watched them plenty of times since then. ((Did you notice that I said that I'd watched them?)) I finally began trying them and they're not that bad. Far less abusive as P90-X! I'm resting, comfortably at 181.6 pounds, for the time being. Even if I don't shed a pould, I'd like to not feel guilty for donning my two-piece bathing suit when I go to Black Bike Week in Myrtle Beach, SC this year! Wish me luck!
I'M BORED OUT OF MY MIND
After finishing Insanity this morning, I layed across my bed and watched my pet squirrel (for those of you who I've shared that story with!) eat the carrot trimmings I'd thrown outside earlier. Who does that? Only 2 more days of Christmas/Winter break remain and I have not a thing to do! If any of you reading this have any "must read" books that you care to lend, I obviously could use the brain activity!
Enough for now. I'm off to read my cousin's blog. www.ninahbee.blogspot.com. I think I saw something really cool about thrift shopping that I need to catch up on! (Which reminds me that I should visit the Salvation Army tomorrow, haven't been in at least 2 weeks!)

Hello? 2012? ARE YOU THERE?!?!
So, apparently, I blogged once last year and then........ Yup.
I'm not sure what I was busy doing, but I PROMISE I'll (try to) do better!
Well, what's new with you all? Did 2012 treat you well? What's new with me, you ask? Not a whole heck of a lot. Still in school. Graduating in May (technically, I'm "finishing" in May; I don't plan on participating in the Commencement Ceremony). My 5 year old has taking up dance - he tap dances on my nerves ALL DAY! Gained 20 pounds (yes, I CAN admit that). Still single. kinda. Loving life. Very much in love with God! I started Zumba over the summer and I'm completely addicted. I'm something like a Zumba-junkie.
Since 2013 is here, a lot is up my sleeves in the next few months. Website, new business, success - and I'm getting nervious! Still considering the Dietetics program at ISU; I hope to have my decision made by next Monday!!!
I hope to get back to where I was with this blog - posting several times each week with fun little nuggets of information. I'm really enjoying the questions I get from my peeps these days: "what kind of cookwear should I buy? Do you have a recipe for ________? Can you come over and show me how to make ______?" Keep the questions coming, folks! Stay tuned and be blessed.
